Illawarra Grammar has unveiled its new state‑of‑the‑art Hospitality precinct, a purpose‑built teaching environment for the Food Technology and Hospitality courses. The new facilities provide students with access to industry‑standard equipment, modern commercial technology and learning experiences that reflect contemporary culinary workplaces.
Extensive Commercial Cooking Facilities
- Electric ovens with high‑powered induction cooktops
- Upright griddle plates
- Two‑basket deep fryer
- 10‑tray Gastronorm pan steam combi oven
- Overhead cameras and screens for real‑time demonstrations
Student Cooking Hubs
- 8 dedicated student cooking hubs
- Each hub includes prep benches, electric ovens and high‑powered induction cooktops
- Variable‑speed ducted extractor hoods throughout
Specialised Facilities
- 12 m² cool room
- Multiple commercial fridges and freezers
- Pass‑through dishwasher zone
- Icemaker
Comprehensive Retail Cafe Setup
- Full‑size 4‑group retail coffee machine with grinders
- Two full‑size 4‑group training coffee machines on mobile trolleys with grinders
- Complete cafe food preparation setup: blending, juicing, sandwich press, salamander and toasting equipment
- POS equipment for operational retail food service
As described in a recent newsletter, the kitchen is named in honour of Mr Roger Summerill OAM.
Mr Summerill served as Chair of the Illawarra Grammar School Council from 2000 to 2019, providing strategic leadership during a period of significant growth and development at the School. His tenure saw the introduction of new facilities and programs that strengthened the School’s academic and cocurricular offerings. Following his Council role, Mr Summerill continued his contribution as Chair of TIGS Foundation until 2025, supporting initiatives that enhanced resources and opportunities for students.
As a parent and grandparent of alumni, Mr Summerill maintained a strong personal connection to the school community. The Summerill Kitchen acknowledges his leadership and enduring contribution to the life of the Illawarra Grammar.
